You Will Need:

  • 1 medium onion, chopped
  • 4 cloves of garlic, crushed
  • 2 green chilies, sliced
  • 2 tsp. of  coriander powder
  • 2 tsp. of cumin seeds
  • 2 tsp. of mustard seeds
  • 1 tsp. of ground ginger
  • 1 bowl of cherry tomatoes, sliced
  • 800g of baked beans

How To:

  1. In a saucepan, add two teaspoons oil and sauteonion, garlic, herbs, spices and chilies until soft.
  2. Then add the tomatoes and stir for 2 minutes.
  3. Add the baked beans and cook for another 5 minutes.
  4. Season with salt and serve with rice or mashed potato.

2. Easy Quiche:

You Will Need:

  • 1 pack puff pastry (or short crust)
  • 4 eggs
  • 150ml milk
  • 75g feta (optional), crumbled
  • 100g spinach wilted

How To:

  1. Preheat the oven to 190 degrees.
  2. Line an ovenproof dish with puff pastry. Leave some pastry hanging to prevent the shrinkage.
  3. Wilt the spinach in a leave it aside to cool. Once it has cooled, squeeze out the excess liquid.
  4. In a measuring bowl, whisk 4 eggs and add milk to it.
  5. Season the egg mixture and add spinach to it.
  6. Then pour the mixture into the pastry-lined dish.
  7. Sprinkle the crumbled feta cheese and bake for 25 minutes.
  8. Let the quiche cool before serving to the kids.

3. BBQ Vegetable Kebab:

You Will Need:

  • A selection of vegetables of your choice, preferably cherry tomatoes, mushrooms, peppers and red onion
  • 1 tbs. balsamic vinegar
  • 3 tbsp. olive oil

How To:

  1. Cut the vegetables into cubes and add thread on the skewers.
  2. Mix vinegar with olive oil and season lightly.
  3. Then brush the dressing over the vegetables and barbecue the skewers for 10 to 15 minutes or until the vegetables are soft and brown.
  4. Serve the vegetable kebabs with potato wedges.

4. Risotto:

You Will Need:

  • 1 tbsp. olive oil
  • 1 onion, finely chopped
  • 300g risotto rice
  • 900ml chicken stock or vegetable stock

How To:

  1. Heat some oil in a saucepan and sauté the chopped onions over medium heat.
  2. Then add rice to it and stir well. Cook the rice for 2 minutes.
  3. Add a quarter of the stock and let it simmer.
  4. Repeat the process until the stock is used and the rice in creamy and tender.
  5. If you run out of stock, then you can add a little bit hot water to it.

5. Broccoli Cheese:

You Will Need:

  • 1 cup of chopped broccoli
  • 1 cup diced onion
  • 1/2 cup chopped button mushrooms
  • 450ml of milk
  • 1/2 cup of grated cheddar cheese
  • 1 tbsp. of plain flour
  • 1 tbsp. of margarine
  • 1 clove of garlic (1 clove)
  • 1/2 teaspoon black pepper

How To:

  1. Steam the broccoli and put it aside.
  2. In a saucepan, saute the onions and add the chopped garlic and mushrooms. Cook until the onions are translucent and mushrooms are tender.
  3. Take a pan and melt the butter. Then add flour to it.
  4. Add milk and whisk well, so that it does not form lumps.
  5. When it turns thick, stir in the cheddar cheese and black pepper.
  6. Then add fried mushrooms, onion, garlic to the sauce and stir for 2 minutes.
  7. Pour the sauce over the steamed broccoli and sprinkle remaining cheddar cheese over it.
  8. Bake for 20 minutes or until the cheese is golden brown in color.

6. Falafels:

You Will Need:

  • 400g chickpeas
  • 1 clove of garlic, crushed
  • 1 tbsp. fresh parsley, chopped
  • 1 tbsp. fresh mint, chopped
  • 1 tsp. cumin, ground
  • Lemon rind, grated
  • 1 tbsp. lemon juice
  • 2 tbsp. breadcrumbs
  • Pepper (to taste)

How To:

  1. Place the chickpeas in a food processor and blend until smooth.
  2. Add the rest of the ingredients and mix well.
  3. Then form small balls of the mixture and place it in the refrigerator for 30 minutes.
  4. Shallow fry the falafels in olive oil for about ten minutes.
  5. Serve the falafels with pita bread.

7. Gazpacho:

  • 4 Spanish tomatoes
  • ½ cucumber
  • 1 carrot
  • 1 red or green bell pepper
  • 1 onion
  • 25ml extra virgin olive oil
  • 250ml water

How To:

  1. Cut the tomatoes into 4 and process them in the blender.
  2. Add the cucumber to the blender and process until it is smooth.
  3. Then add onion and pepper and blend for 3 minutes.
  4. Then finally add the carrot. (It is very important to follow the order of putting the ingredients).
  5. Fill the blender with water up to the level of the vegetables and blend.
  6. Then slowly add oil to it and season with salt and pepper.

  • 2 ripe avocados
  • 1 ripe tomato, chopped
  • 1 clove of garlic, crushed
  • ½ small onion, finely chopped
  • Chili powder
  • Fresh coriander, chopped

  1. Peel, deseed and mash the avocados.
  2. Then add tomato, garlic and chopped onion to it.

  • 50g macaroni

  1. Cook macaroni according to the packet instruction and drain, when cooked.
  2. Heat butter in a saucepan, add a tablespoon of plain flour, and mix well.

  • 1 cup of sliced onion
  • 4 large potatoes, finely sliced
  • 1 clove of garlic, garlic, crushed
  • 100ml milk
  • 50g cheddar cheese
  • 1 tsp. black pepper

  1. In a saucepan, sauté the onion and garlic until they are soft.
  2. In a gratin dish, layer the potatoes. Then add the fried onion and garlic.

  • 8 oz. reduced-fat cream cheese
  • 1/4 cup fat-free Greek yogurt
  • ¼ cup grated Parmesan cheese
  • 2 clove garlic
  • 1 package frozen artichokes
  • 1 lemon

How To:

  1. Preheat the oven to 400 degrees Fahrenheit and line a cookie sheet with foil.
  2. Arrange the bread on a pan and brush it with oil. Sprinkle 1 cup of mozzarella cheese on it and bake for 5 to 7 minutes.
  3. In a bowl, combine cream, spinach, yogurt, cheese, garlic, salt, and pepper. Spread the mixture over the bread slices evenly. Then top it with artichokes and remaining mozzarella.
  4. Bake for 15 minutes or until it is golden brown in color.

  • 3 slices whole grain or rye toast
  • 3 tbsp. Ready-made hummus
  • 1 small avocado, stoned and sliced
  • 1 handful rocket leaves
  • 8-12 cherry tomatoes, sliced

  1. Toast the bread and spread hummus over it.
  2. On one side of the bread, lay half avocado, rocket, tomato and season with pepper. Cover it with another slice of bread.

You Will Need:

  • 2 medium sized potatoes
  • 1 small sized onion, finely diced
  • ½ cup of fresh corn kernels
  • 1 cup of grated  zucchini,
  • 1 cup of  flour
  • 1 teaspoon of baking powder
  • 1 teaspoon of paprika
  • 1 egg
  • 1 cup of milk
  • Salt and pepper to taste
  • 2 tablespoon of olive oil

How To:

  1. Grate the potatoes and leave it.
  2. In a large bowl, mix flour, baking powder, egg, paprika, milk, salt and pepper.Keep the mixture aside for 30 minutes.
  3. In a frying pan, add olive oil and place the spoonful of the mixture on it. Cook until it the fitters are golden brown in color.

  • 1 cup corn kernels
  • 1 cup flour
  • 1 egg, lightly beaten
  • 3/4 cup milk
  • Butter to fry and spread

How To:

  1. In a bowl, whisk egg, milk and flour to make a batter.
  2. Then add in the corn kernels.
  3. Heat a frying pan and add 3 teaspoons of butter to it.
  4. When the butter melts, spread a tablespoon of mixture over it.
  5. Cook until both sides are brown.

16. Cauliflower Tots:

  • 2 1/2 cups of cooked and finely chopped cauliflower
  • 3 eggs,  beaten
  • 1 medium sized onion, finely chopped
  • 1/4 cup of  parsley, finely chopped
  • 1/2 cup of grated Parmesan cheese
  • 1 cup of breadcrumbs
  • 1 tbsp. of of chicken stock powder
  • Canola cooking oil spray

How To:

  1. In a bowl, mix cauliflower, eggs, onion, parsley, Parmesan cheese, stock powder. Make sure you season well.
  2. Using two dessertspoons shape the quenelles and place on the baking sheet.
  3. Bake until the quenelles are golden brown in color. Serve the quenelles with sweet chili sauce.
