Ways To Improve the Nutritional Value Of The Bread

The nutritional value of bread can be increased by adding different ingredients such as flour, nuts, grains, and seeds.

  • Adding oilseeds such as flaxseed, chia, sunflower, pumpkin, sesame, and poppyseed can significantly improve the nutritional value of bread (1).
  • Adding moringa seed powder fortified the bread by increasing the levels of both micro and macro nutrients (2).
  • The protein bread’s antioxidant potential and overall quality improved upon the fortification of bread with cumin, caraway seeds, and by-product flour (3).

In addition to improving the bread’s nutritional value, adding chia seeds can enhance the functional properties of bread. A study evaluated the impact of adding different quantities of chia seed powder or cake on bread quality. The results are presented in the graph below.

According to the findings, adding chia seed powder and cakes significantly increased the moisture content of the bread. The improvement in moisture content could be due to the greater retention of crumb moisture caused by adding chia powder to bread. Furthermore, the increase in moisture content was higher in bread fortified with chia cakes (ChiC6) than those enriched with chia seed powder (ChiS6).
